Clean label Ingredients Manufacturer Announces First Range of Organic Starches & Proteins for the Bakery & Meat Substitute Sector

The organic sector is in the ascendancy. 2018 marked the eighth year of consecutive growth in the sector, to the extent now where it is worth over £2.3bn annually, and accounts for over 1.5% of all UK food purchases. This growth can be attributed largely due to the wider movement that consumers are acting on, namely those of: ethical eating, sustainability, and personal health. As consumer knowledge improves and the call for transparency grows, the organic sector will only increase in parallel.

In response to this, Ulrick & Short has launched a new range of clean label, organic functional starches and proteins. The range provides functional benefits to bakery products such as, binding, moisture absorption, and improving crumb structures and softness over shelf life, and applications include: breads, cakes, batters & coatings and meat analogues.

The ingredients are organic, clean label and non-GM, ensuring that back of the pack declarations are transparent and consumer friendly. Moreover, the organic proteins, such as Organic complexTM 12, offer emulsification properties, and also provide additional health benefits by allowing manufacturers to make front of pack protein claims, further reinforcing the overarching message of health that consumers demand.
