Ulrick & Short Launches New Clean Label Ingredients to Improve Meat Substitutes

In 2018, the number of vegans in the UK rose to 600,0001, with many more adopting vegan buying habits. This represents a 400% increase in 4 years, which makes it one of the fastest growing dietary trends in the UK. Unsurprisingly, the global plant based meat alternative market is massively growing in parallel with this, with global sales now totalling $19.5bn2 annually, and NPD activity more than doubling since 2016.

 

Ulrick & Short is responding to this ever growing demand by launching a range of functional ingredients suitable for vegetarian and vegan meat analogues. The range includes additions to their clean label fibre range – sciliaPF50, and their clean label functional protein range with complexT16 and complex21. The ingredients have been specifically designed to improve the textural qualities, binding, and bite within meat substitute applications, allowing manufacturers to mimic the eating quality of processed meats.

The new ingredients are clean label, non-GM, allergen free and vegan friendly, ensuring that they are suitable for all meat substitute applications, and also ensure consumer friendly declarations. They are easy to apply, and require no process change so not to alter factory processes.
